It appears that in the EXIF information you can add the cameras owner name and I assume add a copyright here.

How do you do this in the camera ?

I did this with my new S2 IS.
Hook your camera up to your computer with the USB cable and go to the Remote Capture screen. Here you can fill in the Owner Name field. Take a remote capture picture and then from now on your name will be in the EXIF data. http://www.photography-on-the.net/forum/images/smilies/icon_biggrin.gif
