Do I just have to crop it like crazy?

I'm not an expert, but I don't think you can do much apart from crop. Even at 300mm, the moon just won't fill enough of your frame.

I've gotten some passable shots with a 70-200 f2.8 with stacked 1.4x and 2x extenders, but they're nowhere near as good as those taken with a big long prime or a telescope.

Shooting at 300mm certainly isn't a waste of time, but as Sean says you won't get the lunar disc appearing that large unless you start stacking teleconverters. 1000-1500mm is about right for a moon that nearly fills the sensor. But I've got quite good shots with my 420mm telescope at prime focus, and although I had to crop it a lot there was still plenty of detail (http://img147.imageshack.us/img147/6392/moonwozs70.jpg).
