can i shoot hdr with my rebel xt? or do i have to shoot change the exposure each time i take a shot?

Or more specifically, select either Av or Tv mode (depending if you want to adjust your exposures by aperture or shutter speed), select ISO100 to reduce colour grain... then go into the camera menu and select AEB. Press left/right and you'll see markers come out by either 1 or 2 stops. Press OK again and point your camera at your subject on a tripod.
The first shot will be normal exposed, your second shot will be underexposed by 2EV and the last will be overexposed by 2EV.

I recommend Av mode. With the same aperture setting, there is less chance of varying optical distortion (for example, if you use + and – 2 EV, then your spread is 4 EV, which may impact the depth of field between the highest and lowest exposure if you were to use Tv setting, giving the HDR software a problem in resolving the sharpest possible image). Since any serious HDR work requires a tripod anyway, a simple variance in shutter speed will have little negative effect overall.

The answer to both questions is yes. You'd want to shoot 3 to 5 exposures...read up on exposure bracketing in your camera's manual. Also plenty of info available on the internet...just google HDR techniques and you'll find a wealth of information. You can even go to the Photomatix website (very popular HDR software program) for some detailed information.

thanks guys, one more thing i have cs4 and i know i hdr with that will photomatix come out alot better?

i recommend you Dynamic-Photo HDR, far better than photomatix, faster and easier for a beginner. also it can emulate quite well from 1 jpg. though like they told you -tripod,bracketing and so on.
