Does setting your color space(sRGB or AdobeRGB) matter when you are shooting RAW or do you just set which color space in your processor?

Set it when you process it.

No, set it in your RAW convertor.

Thanks guys. The way I understand it I will probably need to convert to sRGB before printing?

sRGB before posting to the web since browsers are not colour space aware. As far as your printer that might depend on the model. I think some of the good inkjets can take advantage of the extra gamut of aRGB.

The color space affects the JPG image embedded in the RAW file. It's also stored in the EXIF header and can be used by the RAW converter when applying "As Shot" settings.

Depending on your printer, you will get better colors with Adobe RGB or ProPhotoRGB.
sRGB is a relatively small color gamut designed for web applications.
Here is a graphical example:

As noted by all above, it does not affect the image until processing from RAW. BUT (I get be corrected here), Parameters, including Color Space, are reflected in the JPEG thumbnail the camera generates.
Since I do a lot of outtake deletions and culling BEFORE opening the RAW images, I find it more realistic the view thumbnails with the same Parameters as I intend on conversion. J.
