HERE is a Tutorial (http://raymondshay.com/tutorials.htm) on how to convert color images to black and white correctly. There's a couple of other tricks in there you may not have seen befre as well.

Just use the desaturate feature?

I like the idea of using two and then use the different color popups to adjust to enhance the blu sky, etc. Pretty clever. I gotta play with it a bit.

Yes, using a pair of Hue/Saturation layers is a common way to convert to B&W.

You can also pair a Curves layer or a Selective Color layer with a Hue/Saturation layer. The advantage of using those two variants is the adjustments work in a way more familiar to photographers than yanking the Hue and Saturation sliders around.
