i think the key is going outside :-)
There are so many different ways of shooting in the street. If you want to be stand off-ish shoot with a long lens go for it. If you have the guts to talk to people and engage them straight up and shoot with a shorter lens, go for it!
Check out my sig with the street photos - all shot with an 85mm 1.8 (i think, maybe a couple with a Sigma 30 1.4)

As above it depends on the situation. As a general rule I use a 24-105 zoom but there have been many times I have swapped it for the 70-200 to get that extra reach - especially when I am in a crowd and want to isolate the subject.

It all depends on how comfortable you are interacting... if you outgoing and like to get to know your subjects a little bit and approach them a short focal length works otherwise a long one to not feel as though you're getting all up in their faces.
I would look for something just interesting, with emotion. Tend to be pretty good candid street shots.

some of the fun with street photography is the interaction with people.
