I use an ultra wide zoom (17-40mm L on full frame) + tripod.

Whatever lens provides the field-of-view you want for your desired composition.
First off, "zoom" and "wide angle lens" are NOT mutually exclusive. Zoom is any lens that has different focal lengths (such as 18-55mm). A "prime" lens only has one focal length (such as a 50mm f/1.4)
A wide angle lens has a focal length less than the "normal" focal length* for a particular format. For your 7D, ~30mm is considered "normal", so anything less than 30mm is "wide angle" and anything longer than 30mm is "telephoto" **
*Generally a normal lens has a focal length equal to the diagonal of the imaging device (be it a sensor or a film frame)
**These are very simplistic definitions more geared towards usage instead of technical design considerations such as telephoto/retrofocus design/etc...
