I noticed some people said they took -1 exposure , normal exposure and then +1 exposure. Can someone explain what steps I need to take and can I do it with photoshop cs5? Thanks guys

The process is actually fairly straight forward in that you can use a function called Merge to HDR Pro which is found in the File-Automate menu group. Beyond this it is adjust to taste but you have to make sure that your images will line up. IE, make sure you took them on a laptop or have a very steady hand. CS5 will do some aligning for you if they off slightly.
There is a plethora of information and opinions on this subject online. I still prefer Photomatix to the results that I get from CS5 but it is a plugin that you have to purchase.
If you are just starting out, I would spend some time reading up on it.

Most cameras have some bracketing function to do -1/0/1, check manual. Theres also guides all over.
Good place to start: http://photography-on-the.net/forum/showthread.php?t=637594
Also agree, at least try the Photomatrix trial.

Definitely an interesting combo, but some people have a bunch of gear that isn't listed. Not everyone updates the sig when new stuff comes in (or goes out).

OP, in addition to what you read here, go to www.photocamel.com and find the HDR subforum. Click on the video tutorials there and that will answer most your questions. Many use the auto bracketing feature to get 3 shots, one -2, one properly exposed, one +2. That is a basic HDR sequence. Some folks use 5, 7, or more images. Depends on the situation and more so on the photographer. I have got some decent results with 3 images. Consider downloading Photomatix Pro, that is the standard in HDR software. A remote shutter release or the 2 second in camera time would be desired. A tripod is needed of course. Many ways to skin a cat, but these are the very basics. Lots of books and even a few DVD's available on the subject.
