I have been happily producing HDRs for some years with my EOS 1D2n and my EOS 40D. When I try to use my nice shiny EOS 7D, the result is grainy with lots of false colours. Anybody know whats going on and/or how to correct it?

Well, the camera doesn't produce HDR images, you & your processing software does.
You need to give us some indication of the software & settings you are using & possibly one of your images that you are not happy with.

I've always done some kind of noise processing with every HDR from every camera. Either use the noise processing in the HDR tonemapping SW, or use Noiseninja on the resulting JPEG. This is not a camera specific problem.
