You are going to give more details before anyone can give a meaningful answer.
Are you looking for shots that show the overall picture or close-up detail of the ceiling?
Is there enough light? If not, can you use a flash?
Are you shooting the inside or the outside?
What are you trying to accomplish with the shot?

I mainly mean outside. Just finding old churches and buildings and taking picture of them on the outside, various angles.

Depends on the size and width. ;-) The best lens will get what you want in the frame. I'd say anything between a 11mm and 30mm should do it.

The last church that I wanted to photograph had a lot of telephone poles and lines near it. I needed a really wide angle to get inside of the telephone lines and still get enough of the church for the composition I wanted.

I'm sure that would work for most, if not all, old one room churches. Could still be too long for others.

Keep in mind that with wide and ultra wide shooting close from ground level means major keystoning, Sometimes its better to back off and shoot with a longer lens.

I used a Tokina 11-16 2.8 for some interior and exterior shots of Gothic and Renaissance style churches in Europe and it worked well. Some samples are in my gallery (http://sportesan.smugmug.com)

I've seen a lot of great shots of churches with the UWA lenses (i.e. 17-40, 16-35, 10-22).
