Hello,
I have noticed that for some reason when I use manual mode on My G6 it takes three pics in a row by itself, Its the only mode it does it in, what would cause this,

You probabely enabled focus bracketing . Check your manual on that chapter. (page 103 in manual (http://www.cyfrowe.pl/instrukcje/canon/Canon_G6_eng.pdf))
There should be a hint how to disable it again.

exposure bracketing is most likely the cause. in case that's not it, check that you are not in continuous shooting mode.

in the manual is written that AEB is NOT available in Manual Mode...

Probably Auto Focus Bracketing then.
