As much as I love omelets, this kinda looks like a blob of stuff with red bits and one bit of onion. I think if the omelet had a better shape, more color and veggies and perhaps parsley on the side I'd like this better.

Agreed. It's a bit flat (def. needs some green or contrast) and the color looks a bit off, too, which doesn't help. The main thing, though, is the omelette itself doesn't look very appetizing. I'd play with dishes you make really well which look delicious on the plate, so there are not already potential issues before photography is involved. Sorry, just speaking as a very experienced cook and hedonist ... if the food looks *meh* to begin with, very little photography can rescue an image of it.
Another note, you might want to reconsider the angle and composition. If you come at food from a shallower angle, closer to the plate edge, it will generally look much better. Also, you can never underestimate the importance of keeping the plating composition clear, clean and concise. There is quite a lot of raggedy, irregular edge going on with the omelette, which detracts from the overall image.
One more nit-picky (but kind of important) thing, too. If you're thinking of using photos like these for stock, you will definitely want to get the spelling right, so people can find your photos.
