I have seen a lot of photos on internet that were taken with Canon Digital Ixus V / S110 and in those photos I can see details about shutter speed and so on...

For example, in Canon's site on the example photo there were this information: Shutter Speed 1/640 sec. Aperture Value F2.8 Exposure Compensation +1/3.

How do I get to know these from my photo and can I even change the shutter or control it?

Hi

You can't control them manually.
You can see exif information for example in acdc or photoshop or the software in that canon cd delivered with your camera.
(Only shutter speeds above 1 second are manually controllable.) At least with ixus v3.
