I recently purchased the Canon 7D. What format do I need to convert the .mov files... in order to play the movie clips on my DVD player?

MPEG-2. However, there is also the issue of authoring a DVD and how picky your DVD player is.

What exactly do you mean by authoring a DVD, and how do I go about doing that?

You mean...it does not record the entire clip?

Basically, you need to get the files into a structure that your DVD player can use. The authorizing program will do this, and provide you with a user interface to make splash screens and chapter marks. If you google VOB + DVD, you will find all the information you want. Some DVD players are better than others when it comes to the file structure they will accept. All will accept the video_TS and .VOB format, some will read straight MPEG 2 files. I've owned both.
