Default G12 IS-Modes - Continuous vs Shoot Only

What are the pros and cons of setting the camera to "Continuous" vs "Shoot Only" IS mode?

According to the manual the former lets you confirm the effect on the display - sounds good, but I assume there's a reason they let you turn it off?

If shutter release response/speed is more important to me than what's shown on the display is "Shoot Only" the better option?
