Default Speckled Trout

OK, does this qualify as wildlife? Speckled trout caught off my dock on the Wallace River, asparagus donated by a neighbour from their garden, and a local potato baked to perfection....

I was just asking the wife about dinner. It seems Im gonna have to go to some extreme to beat that .

Looks fantastic to me and if i had it i'm sure it would disappear FAST !! I had Steelhead Trout baked today with a salad and wild brown rice medley followed by strawberrys , pineapple , and cantalope ! I found a great receipe online at the food network channel and boy oh boy does it taste great !!

Thanks very much, Ron. These speckles aren't as big as your steelheads, so it takes more to make a meal, but they sure taste as good

Ron, fiddleheads are the early spring growth of a certain species of fern that many Maritimers drool over. You pick them only when they are just shoots, very tender, then you usually steam them and serve with butter and a squeeze of lemon.
