Those blurs around the corners aren't a result of poor focusing, but are a defect of many wide aperture lenses. To reduce this you will have to stop down the lens a bit. Don't worry too much about it though, even expensive lenses like the 24 f1.4 have the same problems when shooting wide open.

Once my manfrotto tripod finally arrives, I'll have a much easier time shooting. Been AWOL for a few days because of things going on in real-life. Bleh.

during the live view, focus, then zoom, focus a little more, zoom once more (x10) and tiny little adjustments and it'll be bang on

Use a remote shutter release or timer delay as well... the shake in the tripod and pressure on the shutter from your finger are deadly. The 50 1.8 makes some decent images at 4-6 seconds wide open... I've cropped M31/Andromeda to a decent shot with it personally.

best way to focus on stars is stop down to f/5.6, use live view and aim at a bright star, switch to manual focus and zoom in on the star with the lens all the way, next use live view zoom out to 10x and finely adjust the focus until you get a nice pinpointed star shape. Also if you are not using an ir remote to trigger then shutter then use the 10 second timer. I doubt mirror slap is causing any camera shake at all
