For your intended use, I would definitely go with the 5DII. It's a truly awesome camera (nothing against the 5DIII or 7D).

5D MkIII if you plan on making some Serious dough with it. If not, Mk2 would be a great camera for landscape, portraits and will definitely be the next step for you from your Rebel body.
Last high school season I shot with dual 7D's so I know for that purpose it was an excellent choice at the time. Now that I do more weddings that have already paid for a majority of my investment in the 5DM3, it made sense to my situation. This season I plan to attack the fast pace sports action with my 7D and the candids of the fans and athletes with the 5DMk3. I also agree with a previous comment, you'll take full advantage of your 17-40 L by going with the FF of the 5DMk2. Also, there are many 5DMk2's that are lightly used going for great prices these days.

The 5D2 is an excellent camera. 6 months ago before the 5D3, everyone was very happy doing landscapes, portraits and weddings with the 5D2. The primary and most significant benefit of the 5D3 vs 5D2 is auto-focus speed benefiting sports photography and an improvement in low-light AF speed that for most photography hobbyist isn't worth the $1,500 extra unless your a professional photographer or have ample savings lying around and can afford the extra cost.
Lets face it, even the 5D classic is a IQ upgrade from your T1i. The 5D2 is excellent.

A used 5D2 is the best bang for your buck right now. I will bet 90% of the time ppl can't tell the diff between the image from 5D2 and 5D3. 5D3 has better AF, but don't forget that better glass can also help you focus in dim light situation. I think 5D2 + 35L will focus better than just the 5D3 body.

I would go with the majority and say a 5D mk11.
I had the original 5D, then put things on hold when the Mk11 came out. Bought the 7D never 100% happy with it so after 18 months sold it and got the 5D mk111 which is overpriced. If I could turn back time I would have gone for the 5D mk11.
