I know that I have posted images of my favorite meal being cooked (Blackened Chicken Tenders) similar to the first two before, but these images are slightly different, and the one depicting the Lime-Infused Orange Marmalade as served, is new.

Not all cooked in the kitchen, last night, I enjoyed having a grilled ribeye steak smothered with mushrooms sauteed in butter and Cream Sherry and a side of French cut green beans on the patio. I had a glass of Bogle Petite Sirah to compliment the meal.

Dinner was actually great and accompanied by music playing in the background as well. As far as eating alone, not a bummer at all. I've lived by myself for over 25 years and prefer it that way. I have companionship when I want it and peace and quiet when I want that too. ;-)a

Blackened Swordfish with fresh Mango Salsa, along with some toasted bread and Cucumber Slices with Zatarain's Creole Seasoning on them.

We make our own Blackened Seasoning that we learned of at this blog:

To us, it is just outstanding and we follow the recipe fairly closely and feel it is absolutely worth the effort to make our own (we make good-sized batches and it lasts us for a while).

There are some 22) images from this particular swordfish meal in our Flicker album Food & Beverages (linked underneath each related image on Flickr), should you choose to investigate it.
I have also added the Hungry Mouse hyperlink into the description field of each of those Flickr images.
We have no affiliation with the blog and this cooking is just something that we do at home.

My spouse Mary makes these meals that I feel are better than any that I could get at a restaurant, and she will wait patiently while I photograph what she created, using gear that she encourages me to own.
I am super-lucky (blessed perhaps)!! :love::-)

thanks for info! I really like blackened food, my favorite is blackened gator.

Blackened catfish is fairly easy to find in some restaurants around these parts, but one of my all time favorite remembered meals was blackened swordfish in Las Vegas many years ago. It was truly amazing! Thanks for reminding me, Mark! Your pics have me salivating. :-)
