OK, two recent things I managed to shoot without any styling; home made 6-egg noodles and panforte di Sienna aka Sienna cake Both delicious

OK, again no time for styling at all, my family was grabbing the food as fast as they could.
Here is a delicious prime filet mignon seared in a cast iron skillet and finished in the oven...medium rare, perfect. Served with butter and some fresh horse radish and some sauce Bernaise for those who are not crazy about horse radish.

When you sear in cast iron on the stovetop...How do you not smoke out the house? Every single time cook like that, smokes out the house. And it's not burned...

I used to smoke the heck out of the house when I was searing my steaks in a very hot skillet.
Now, I never do. The trick is to sear it on medium heat. First my cast iron skillet is medium hot and dry, no fat. I heat it up but not on a high flame, medium only so that a mixture of olive oil and butter doesn't burn. I preheat the dry skillet for 5-7 minutes and add the fat just before adding the meat. This cools off the skillet but not too much. I also have my exhaust fan running but not on the highest speed. Sear each side for a minute or 1.5, gently sear the sides for a few seconds and off to the oven at 400F in the same skillet. No smoke at all or barely any. After 6-7 minutes in the oven I take it out and loosely cover the meat with a piece of aluminum foil and let it sit for 5 minutes on a counter and it's perfect...medium rare!
