Default Flying birds

I was riding my golf cart in late afternoon into the sun and saw a Ospreyfishing by finding prey and diving. I quickly set mt Canon 40D to av, iso 400 and started snapping with f6.3 to f8, I had a verh high shutter speed but none of the images were sharp. Iw as using a Canon 70-200 with a 1.4 extender for 340 total, none were sharp and of course the histogram was all to the right. My over/under compensation was .677 under and I could not get it to change. None of the exciting images were sharp. I did have IS on?
