I don't see how that's personal information. Do drivers hide their license plate when driving out in public?

Yes they do. But it is slightly different posting a picture of the vehicle's plate than just having it on the back of your vehicle. This is just my opinion.

How does it differ? I really don't get the sense in that. It's one of the dumbest conventions in photography.

I took an HDR shot of a Triumph Stag recently and I blurred out the plate. My reasoning was that if I owned that car I know I'd be risking having it stolen by parking it on any street, but if a photo of it were posted on the net and that street could be identified, then the risk of theft would be far higher, especially if I parked there regularly.
