i have a basic question. is there a difference or benefit in the light if -

a- using bigger aperture and lower power on the flash
b- small aperture and more power on the flash

do either of these change the softness of the light?

simple answer - change 'softness' of light? no.

shooting wider can soften your image though with shallow DOF.

Use a smaller aperture to under-expose the ambient relative to the subject lit by your flash; this doesn't directly affect the quality of light, though unlit areas may gain a bit more contrast.
