Hey guys, I've been doing portraits down at the beach at sunset and when the sun is low and directly behind the model my AF can't find any light to focus on, does anyone know a way around this besides using MF or shining a torch in her face!? (I have two soft boxes that are triggered from the receiver on my camera.)

You could use a reflector, secondary modeling light, and/or a speedlite mounted in the hot shoe for AF-assist.

I don't think low light is the issue it is sun getting into the lens, so avoid that.
