Default Sizing Photos for Printing Using CS2

Hey

I recently took some shots for a prom session and was delighted with the results. I posted them on my website for friends and family to buy. When I got my first order through, I uploaded to my supplier for 8 x 10 prints but the head and feet were getting cut off on portrait orientated shots.

What is the best way, in CS2, to ensure that images are the correct size for printing, and should I be creating individual PSDs for the various sizes?

crop to 8X10 and allow for 5% crop. Typically labs will over enlarge by a small percentage to prevent white borders.
