Portraits: manual flash and camera manual mode for consistency?

I have a family portrait coming up and have been experimenting with manual flash for consistency. I find I am learning what manual flash zooming does and how best to bounce for either full coverage lighting, or mood lighting from an angle.

Do you find on portrait shots where you have time to setup that you use manual flash and manual camera mode to ensure your adjustments produce consistent results from pose to pose? I think that if you can take about 5 test shots of your photo assistant (if you have one) using manual flash and manual camera mode, then you can be set and ready for simply posing the subjects vs ensuring TTL provides consistent exposures.

I will be performing a family portrait at the client's house and plan to use the flash about 80% flash/20% ambient light.

Thoughts? How would you do it?

Yes, that's usually what I do. Flash in manual and camera in manual = every group photo can be batch processed later in one step! Manual rocks!
