Default Food Photography: charge by time or per item?

Hello,
I'm wondering what is the best practice to charge in terms of food photography? A complete session say 4hrs which equates to $xxx or $xx per dish?

I would do time unless they asked for per dish pricing.

Food photography is paid for by the shot. A good shot for a demanding client will take about half a day. The photographers make all the money and food stylists do all the work.
