How do I make a thin slice of kiwi/orange stay in one piece/from melting due to heat? Is there a special type of spray that can be used for this purpose?

Use one piece to get set-up. Then replace it for the final shot. For instance, some guys use mashed potatoes to stand in for ice cream.
