If you do full HDR panoramic, Hugin (Mac/PC/Linux) and PTGui (Mac/PC) panotools frontends support full HDR workflow. On the Mac, Photosphere does HDR assembly and panoramic stitching, although it is more of an HDR tool than a stitcher. Hugin and Photosphere are free, PTGui costs $.
