I've tried looking around but can't find the answer, probably because it's a simple question...
How do you use the ISO 12800[H] option? It's usually greyed out when I try to access it?

If it's like my 50D, it's in one of the custom function (C.Fn) options. You have to enable the extra ISO modes.

You also (IIRC) have to turn OFF Highlight Tone Priority...

set Custom function 1-3 to ON to enable ISO expansion, It's on page 206 of your 7D instruction booklet

1) CN 1-3 ISO expansion -> 1: On
2) CN 2-3 Highlight Tone Priority -> 0: disable enjoy Hi ISO noise levels!

She tried to camouflage herself among the bushes, to fool the AF, but the AF found her anyway.
Had nothing to do with ISO 12800, though. I think the images you referred to used ISO 3200.
