Can I get the down and dirty explination for a new guy on how 18% exposure works?

Sure someone would be happy to answer your question if it was better defined as to what you want to know.

What is an 18% exposure?, maybe you are asking about a gray card or maybe you are asking about how a camera sees in the world as 18% gray or maybe about working a strip club where the employee must not expose more than 82% of their body?

Reframe your question to explain what you hope to learn and people will respond to help with you understanding your concern.

First, 18% exposure isn't ideal for everything. Read through this: Need an exposure crutch?
