When viewing the EOS utility, there is a number in the upper right hand corner that counts down with every shot i take. right now it's at 8907. I've googled and found screenshots, but no explanation of what this count is. is this shutter count?

Here (external link) is an example.
the number i'm wondering about is the 566 under the AI Focus.

I believe that is the number of shots you still have room for on the memory card.

i thought at at first, and switched to a different card, much smaller, but the count remains the same.

If you haven't, you really should download the manual for the software you have from Canon -- you can get the pdfs for the latest versions of EOS Utilities, ZoomBrowse and Digital Photo Professional, and it's worth having the on your "desktop". That way, you can be the one answering questions:)?
