I have been giving this a shot today. i think I must be doing something wrong. Any help would be appreciated.

I took 5 different shots around a table. Everything is what I think it should be going through the first layer. When I add the second layer(third shot) the work I did previously goes away. So now I have to paint over the first two images. And this happens again when I add the third a fourth layer.

Should I have to re-paint what I revealed in previous layers each time?

Try bringing in the new images on a black layer, then only paint the areas where you are in that specific image. Otherwise you'll have to paint black over where all the previous work was done.

The other thing you can to is overlay while reducing the opacity layer to help you paint something in or out....

When you create a new layer with it's associated layermask, the layermask is white by default. You can invert that layer mask so it's black, and then you paint in white where you want to add the person from that layer.
