I guess she does look like a giant, especially seeing the people on the beach in the background, but then again, I was thinking originally that it made her look statuesque.

Just move the camera slightly higher.
Not saying you should have done it with this shot but try different verticals next time to see the differences.

Yes - we stayed there in fact and took the commuter to St Barts (9 minute flight)

St. Maarten is on our list of places to go possibly next year for our 25th anniversary. Can do 4 days there or 7 days somewhere in Cancun area.

Cancun - really???

St. Maarten is cool. Been there twice now. Only the Dutch side though...

Yes, IMO the shot would look better with some more distance between you and her (it is distance to subject that effects perspective not focal length), a longer Focal length could then be used if possible so you do not have to crop a lot during pp.
