The reason Nikons can sometimes appear sharper while Pixel Peeping (a mental illness) is that Canons default to a higher level of Noise Reduction (image smearing) from the factory and lower level of sharpening. Canon takes the position that they want the best out of box experience so they set the NR at a fairly high level to make sure noise is minimal in all their images, but it's at the cost of out of box sharpness.
