Pick an object, mount your 7D on tripod and make test shots with ISO 100 at 200mm and you can decide for yourself if you have any AF issues. Sharpening adds noise. I find LR a bit too aggressive and never use the sharpening option there.

I definitely need to do some more controlled tests, but given the provided parameters, and assuming AF actually hit it's target, does the sample look soft to you?

It looks a bit soft but I can not tell you for sure if it is the AF or something else. Do you get the same results with other lenses?
As I received my lens, I did many tests.
One of those tests:

Shot behind window (original perspective) 200mm, 1/80 sec handheld
Heavy crop of the above shot

I'd say that on average, my crops would be close to your results. Here is another example, this time simply converted using DPP, with only in-camera sharpening of the default=3.

This example is sharper than my. The object of mine is around 30 meters far away. Maybe you worry too much or compare the lens with the 100 L macro you own, which has to be sharper than this lens, when compared at 100mm. From my experience, the 70-200 2.8 ISII is very sharp at F 4.5 down to F9.

Perhaps you're correct. When the 70-200 hits, it is sharp, but on occasion I'm having some trouble getting it to actually hit its target. I might just need more experience with the lens...Lightroom metadata shows I've only taken 160 pics with this lens.

I know what you mean. It's weird, I'll be sure I got the shot and then back at the computer it'll be soft. Then the next shot, taken a second after, exactly the same way, will be spot on perfect. Can't say I mind that much as it is probably me doing something I shouldn't and when it hits it really hits!

Exactly this ^.... I guess for a 2k+ lens I unconsciously am expecting it to actually press the shutter button for me.

Haha, yeah! It is nearly impossible not to be surrounded by beautiful women here in East and Southeast Asia.
