How is this achieved?

I don't understand how people are getting these kind of results, from the video the day seems extremely bright , and everything is blown out, (probably how my shots would turn out), *flat and unflattering ? =/ *

Now is this being achieved by basically under exposing the background by like -2 on your camera? so you don't see any blown out high lights or anything? and then just fill the model with the beauty dish? or whatever light modifier is being used? I'm trying to understand how this is accomplished because I would love to replicate or get EVEN CLOSE to these shots with some of my portraits I do outside or even indoors.

Looks like mid-day sun so they probably used a high power strobe to over power the sun I.e (Einstein/Prophoto D1). Other factors could include HSS, ND filter, and stopping down the lens.

That light setup she was using is insane.

That is easily to replicate with 1 strobe or even a speedlight and pockets wizards with hyper sync, you can even use Yongnuo YN-622C for that.

Check out the stuff done by chesterjohnphoto on this forum. It looks like he regularly uses a setup similar to this, with great results.

For outdoors, yes. You'll have to have a pretty high shutter speed in order not to overexpose the background and a powerful flash in order to get the proper exposure on the model.

Indoors, it's much easier as you aren't competing with the sun.

I have a 430exII and some cheap Yungnuo triggers for OCF use. I have to wait MUCH later in the day to do outdoor strobe work since my triggers sync at 1/250 and my flash is pretty weak.

A good initial set-up (for me) would be an AB1600, PW's, and a Mola Demi.

PW is pocket wizard. Mola is a popular maker of beauty dishes, a type of light modifier, the demi is one of their products. To achieve the effects she is getting in the video you need a flash capable of overpowering the sun. In effect you need to underexpose the scene (which may mean using small apertures or ND filters to darken the sky sufficiently) and then using bright flashes to replace that light.

Like I mentioned, you can also use the Yongnuo YN-622C triggers for this, instead of pocket wizards and save a big $$$
