Hyogen, the T1i has a different sensor than the newer generations of the Rebel lineup, and even with my T2i (newer sensor) I could only get remotely close to this. The FF cameras take full advantage of the whole lens and the whole aperture - it does not crop them like a cropped sensor camera does. The resolutions of all 3 cameras - T1i, T2i, or 5D2 - don't really play into what the camera can/can't do with a lens, but does factor in on color interpretation. All three cameras interpret colors differently, just like different films might. Truthfully, I really like what the T1i does with color - its very true to life and cut and dry. I really like what it has done in the interpretation of your subjects.

Thanks a lot for helping make this even more clear for me. I agree, the T1i is more true to life, cut and dry. I want to add a little more realistic looking pop in color as well as more separation when I need it.
