you can use the shutter button as metering, so when you focus, you can meter at the same time, and stabilization will already be activated. Recompose with shutter still half pressed, and shoot. I have never ran into an issue that IS is not stable when I shoot, though I've read of it on these forums.
on a side note, I stay away from focus recompose as much as possible. Even with the 5D2, my home lighting is good enough for the outer points. Focus and recompose is saved for those really crappy moments.... those moments where a flash is required, and the assist beam seams to work ok.
