It does vary, for instance with the boat shots, I set the tilt with an educated guess from experience, knowing that F10 on 24mm would give me enough. As I was actually sinking in the shifting sand under the water, I didn't reall have time to faff about. 
When using it with a tripod for more considered shots, I tilt to approximately the right degree for the height and then fine tune it in the viewfinder, often using outer focus points as they are quick to swap about.
