We are now back from Mexico... We really had a great time and felt very safe where we were (Playa del Carmen, staying at the Barcelo resort with day trips to Tulum and Chichen Itza). I am also pleased with my gear choice (17-40L + 35L + 70-200L) but did not use the tripod much.

I go to Riviera Maya every year. Take the 17-40 and the 135L.

The 17-40L for your landscapes/everyday walk-around

The 135L for that portrait along the shore.

I personally wouldnt pack as heavy as you are planning on only because all that expensive equipment at an all-inclusive in mexico could be Dangerous (D)
