The beauty of Tuscany is in its small towns, villages, and farms. Of course Florence and Siena are not to be missed, but you need to spend more time in places like San Gimignano, Arezzo, Cortona, wineries, etc. You will surely need an ultrawide lens. Telephoto? I doubt it.

I will repeat myself: One week is nearly not enough.

Cinque Terre, all those small cities in the waterfront by boat or from mountains by train, you need a whole day for them (and it is not enough). You need UWA, zoom or prime, as wide as possible.
Otherwise, those are not in Tuscany, they are in Liguria. ;-)a
