Dave3222 - They do look pretty amazing.

Question, if I may ... how do you core the mushroom? Mellon baller or some such? Also, what type cheese?

Very nice photo - Was this a tough image to make? I like that there is some flame detail. Looks delicious, thanks for sharing.

Thanks. I ordered this dessert two days in a row to get it right... :) There should not be too much ambient light to make the flames visible - so flash is out of the question. There should be a fairly slow aperture (F/8 or slower) to get sufficient DOF. The shutter speed should be fast enough to avoid blurred flames and camera shake... So I am glad that the 5D3 has good low light capabilities @ ISO 12800.
Also they provided me with a little bit extra alcohol to keep the thing burning a few seconds longer to give me more time.

I did another one last year but that did not come out that well.

Thank you both. Lupo-Lobo, all I do is remove the stem of the mushroom and sautee both sides. In a separate pan I make the shrimp and tomato sauce. When both are done I fill the mushroom and top with cheese, this was muenster.
