At both Viera and most of the roads at MINWR you can shoot from the car or drive to a spot where you want to setup the tripod and telephoto and shoot from the side of the road. GBH and Anhingas are nesting around by the SouthWest corner of the Viera Wetlands central lake. Viera is open to cars except after heavier rains when soft spots develop on the berm roads. Then you would park in the lot and walk to a spot to shoot. Early AM (7 AM opening) you will be facing West from the parking lot side of the wetlands. In February the "official" closing time is 7:00 PM but right now (2/3/15) it is fairly dark by 6:15 PM and may be asked to leave earlier than 7:00 PM.
At MINWR I would go to the Visitor Center and pickup a map there of the Refuge. Some of the smaller roads get twisted and complicated.
I-95 exits are numbered from the south. Cocoa Beach (from the South) would be off at X-201, Rt. 520 and East to the beach. From Cocoa Beach it is easier to go North (to KSC and MINWR) on A1A which curves and becomes 528. Then a few miles to I-95 North to X-212 for KSC or X-220 for MINWR. Returning then to Cocoa Beach it would be off at X-205, East on 528 past the Port and curve onto A1A South.
Gatorland near Orlando has a nice breeding area with a wooden walkway (easy walk w/ tripods and a great white). The gators below the nests keep the snakes and other predators away. Try their website for info about their hours and photographers early admission pass. Have not been this year so don't know what it costs now.
