Something a little different. It's been a 20yr search but I finally got a decent pork pie a la Melton Mowbray. Australian pork pies are crap! My first use of the camera's flash and my first attempt at making a pork pie. In an 11" tin It took near a full butt!! Was worth it though...............I​'m all pigged out! :-)

I gave you a like. Not sure that is high on my exotic food list but I know I will try it with a cold beer. I do like my meats. My wife tells me I can't have pudding unless I eat the meat. Next 3 big trips are the UK primarily Scotland and Ireland (I know I wont't eat haggis) Australia /New Zealand and Hawaii. Not sure about the order. It may be 5 or 6 years before I get to that.

Make sure that you try a Melton Mowbray pork pie with some HP brown sauce or mustard pickle. You won't be disappointed. The one I made is based on an old English recipe where you boil pigs feet into stock to make the jelly. Whilst nowadays, they just add gelatin to water. The hole in the top of the pie is where you pour it into the cold pie and it sets around the meat which has shrunk back from the pastry whilst cooling
