Another rather shy customer!
I would like to try to brighten the head of the bird and darken the background but I don't know how to do that.

If the light was as low as I suspect, I doubt you could much. Conventionally you need a narrower aperture, but at f/5.6 you're already at ISO 1600 and only got 1/250th. I'm not sure you could go much narrower than f/6.3. I've sometimes got away with 1/100th but at that speed it's hit and miss and relies on the bird not moving much.
