As somebody who has taken his 5D II, III and IV to amusement parks.. It's worth it. We have photographs of our kids that no camera phone can come close to touching. Great memories!.

I would take two lenses...my 24-105 f4 and my 50 1.4, depending on how creative I want to get I would pull one lens off and shoot with the other for whatever is going on...

Right now I would take my 5D IV and my 24-70 f2.8 L II call it a day... We recently went to Knotts Berry Farm but I left the gear at home because I just didn't want to lug it around.. It never comes off my shoulder unless it's on my wife's shoulder...

I have gotten use to it actually, carrying it around...

When we go to Disney World again I -might- take a 24 f1.4 for slow dark rides, but that's if I really want to do better than the 24-70 II at 2.8, My 5D IV in low light is amazing, my 50 f1.4 (Sigma Art) maybe my 15mm Fish cuz its so small anyway... Don't mess with polarizers/CPL, do what you need to do in post. Polarizers will slow your shutter down and if you are not careful with the sky it could look odd... clouds yes but only if its partly cloudy but then again you can make clouds pop in post...only thing I would say they are good for is reflections and glare...
