Desaturate by about -8 or add a channel mixer in PS, check the monochrome option, then reduce the channel mixer layer opacity to about 20 or 30

I don't know if this will be of much help or not but sometimes when you apply a levels or curves adjustment layer in PS, it can oversaturate your subject and make skin tones look off too. Try changing the blend mode of any levels/curves adjustment layers from 'Normal' to 'Luminosity'. That way, the adjustments won't affect the color tones.

And as Vinz says, sometimes just by reducing the vibrance can improve skin tones as well.

when you want use curves or anything to adjust luminosity, change the layer blending mode to luminosity. if you do that, it will not affect the saturation or colors.

when you use curves to adjust the brightness only, change the layer blending mode to luminosity

when you use curves to adjust the colors, change the layer blending mode to color.

You could also add a 'Selective Color' adjustment layer and on the Reds, increase cyan some and reduce magenta a bit. I don't have set numbers to use for adjusting skin tones since everyone is different so play around until you're happy with the results.

I have it setup on my center button.

It's similar to Focus Settings ( the focus change settings button), but it enables a floating AF when using flexible spot AF.

David, to my eyes, the reds in the Coca Cola sign seems a bit too warm, especially because of the color temp. of the street lamp. You may disagree with it but I wondered how the sign would look if the reds were...redder. So, I added a hue/saturation adjustment layer and changed the blend mode to Luminosity, selected the reds and moved the lightness slider to darken. I also bumped the reds saturation up while still in that blend mode and came up with the result below.

Only the reds were affected by this adjustment.
