Maybe I'm just not understanding what you are saying, but why couldn't you move the AF point? You certainly can do that with the 7D.

Sure Tim.. 7DII has 65 point covering a large portion of the frame, were as the 7D does not have nearly as may points, so if your framing a subject in the view finder you can and I do move my AF point to the eye while framing the subject more closely to what you would like in post thus giving you the image your looking for with out having to crop in 100% to move that subject to the correct framing.
19 to 65 is a big difference. and the 7D seems to always be just not quite there.
Anyway thats the way I shoot when I can, getting as many pixels on target as I can. Yes I still crop as much as I have to even after trying to get as much of my subject in the correct frame.
Now for me I'm talking wildlife.
