You can get away with clipping shadows quite heavily for effect (depending on the image obviously). Highlights have all been clipped in that pic for effect too. Contrast is definitely your friend :)

In Lightroom the Tone Curve, shadow/highlight, blacks/whites and clarity controls are all extremely useful.

The Colour/HSL luminance controls are useful for selectively lightening/darkening specific colours in your conversion - blue for darkening skies for example...

I usually try to get it right in camera as I am not a post-processing kind of person. :cry:

I am using Canon and from the Canon DPP software, I may add the Red filter to monochrome and add a Sepia tone and tune the sharpness(contrast) and brightness(texture) to taste.

Depending on location, underexposure of "whites" may help in extraction of textures.
Another way is I use the monochrome picture style in Canon and edit the settings and save it as a custom b&w style.

for exact recipe of the secret sauce, I need to check my settings in my camera.  :p
